These marinated tofu and herb Swiss chard wraps with peanut sauce have quickly become a staple Summer garden recipe for us. My husband and I absolutely love them. But shockingly, so does our 2-year-old! I think it’s the playfulness of the eating experience that encourages her to eat this nutritious snack. She helps me wrap the filling into the Swiss chard leaves and then loves dipping into the peanut sauce. I hope you love this delicious and easy Swiss chard recipe too!

Tofu Swiss Chard wrap recipe

Using Swiss chard like this as a wrap is one of my fav ways to utilize this garden green.

The wide leaves make for a perfect, low-carb and gluten-free wrap.

The larger the Swiss chard leaves, the easier they are to wrap.

So definitely let your plants get as large as possible before harvesting. Or if you’re purchasing Swiss chard from the grocery store or a farmer’s market, look for a bunch with wide leaves.

Definitely eating it raw. Which is why I love this recipe!

This recipe won’t change the nutritional value of the Swiss chard because you don’t have to cook it.

How do you get the bitterness out of Swiss Chard?

Yellowing leaves are an indication your Swiss chard plant is overgrown, which can result in a bitter taste.

Many folks find Swiss chard leaves to be bitter.

But I’ve found two easy solutions to get the bitterness out of Swiss Chard.

The first is to harvest (if growing in your garden) before the leaves get overgrown.

You’ll know if your plants are overgrown by the colour of the leaves. They should be vibrant. If they have started to yellow, your plants are overgrown.

The second trick to getting bitterness out of Swiss chard is to remove the stems.

The stem is typically the most bitter part of the Swiss chard plant. So simply use a sharp kitchen knife to cut it off.

Between prep and cook time, you’ll be able to have this Swiss chard recipe ready within 20 minutes or less!

How to make Marinated Tofu & Herb Swiss Chard Wraps With Peanut Sauce (Gluten-Free) 

These marinated tofu and herb Swiss chard wraps are easy to make require only 5 steps!

Step 1: Prep the tofu

Marinade your tofu and place it in the oven or Airfryer to cook for 15-20 minutes.

Step 2: Prep the Swiss chard, veggies and herbs

Clean your Swiss chard and remove the stems (optional). Shave your carrots, cut the peppers and remove your herbs from the step.

Step 3: Make the peanut sauce

My peanut sauce is easy to make and comes together with just 5 ingredients. It will take you less than 5 minutes to put together.

Step 4: Remove tofu from oven and let cool

Let tofu cool slightly before assembling your Swiss chard wraps. If you work with it while it’s hot, it will wilt your Swiss chard. I like to let mine cool for 10-12 minutes before assembling.

Step 5: Assemble your Swiss chard wraps

Place your Swiss chard down on a cutting board and fill it with the marinated tofu, carrots, peppers and herbs. Gently wrap it length wise until it’s in a tight burrito-like shape (you won’t be able to tuck in the ends). Then enjoy with your peanut sauce!

These marinated tofu and herb Swiss chard wraps with peanut sauce have quickly become a staple Summer garden recipe for us. They’re easy to make and come together within 30 minutes or less. Plus the raw Swiss chard is incredibly healthy for you! I hope you love them as much as we do.


Ingredients

Scale

Swiss Chard Wraps:

  • 1 block of firm tofu pressed for 510 minutes to remove any excess liquid
  • 1/4 cup of tamari or gluten-free soy sauce
  • 1/4 cup of olive oil
  • 2 tbsp of maple syrup
  • 1 tbsp of garlic powder
  • 1 tsp of sriracha sauce (optional)
  • 12 medium-large leaves of Swiss chard
  • 1 large orange, yellow or red bell pepper
  • 1 large carrot
  • Handful of fresh basil
  • Handful of fresh mint

Peanut Sauce


Instructions

1. Pre-heat oven to 400° and prep the tofu marinade, whisking together soy sauce, olive oil, maple syrup, garlic powder and sriracha sauce.

2. Remove tofu from packaging and gently press between paper towel using your hands for a few minutes. This will remove any excess liquid. Then slice length wise into 1/4″ thick strips and place into marinade. Be sure all pieces of tofu are covered in marinade. Transfer to a shallow baking dish if necessary.

3. Let tofu marinade for as little as 10 minutes or as long as 24 hours. Then remove from marinade and place on a baking sheet lined with parchment paper.

4. Bake for 15 minutes, flipping at the half way point. If you prefer a crispier tofu, cook for an additional 3-5 minutes on each side.

5. While tofu bakes, prep vegetables and peanut sauce. 

6. For the Swiss chard wraps, remove the stems from the chard and lay each piece flat so it’s ready for assembly. Cut your peppers length-wise in strips. Use a vegetable peeler on the carrot to make thin ribbons. Remove herbs from stem.

7. For the peanut sauce, combine all ingredients together in a bowl and whisk. Sauce will take some whisking to come together and smooth out. If sauce is too thick, add 1-2 tsp of water at a time.

8. Remove tofu from oven and let cool for 10-12 minutes before assembling your wraps. To assemble, place tofu, vegetables and herbs in the middle of the Swiss chard leaf and slowly wrap (ike you would a burrito but leaving the ends out).

9. Serve with peanut dipping sauce and enjoy!

  • If you prefer spicier food, consider adding more sriracha sauce or red pepper chili flakes
