Marinated Tofu and Herb Swiss Chard Wraps With Peanut Sauce (Gluten-Free)

Description

These marinated tofu and herb Swiss chard wraps with peanut sauce have quickly become a staple Summer garden recipe for us. They’re easy to make and come together within 30 minutes or less. Plus the raw Swiss chard is incredibly healthy for you! I hope you love them as much as we do.


Ingredients

Swiss Chard Wraps:

  • 1 block of firm tofu pressed for 510 minutes to remove any excess liquid
  • 1/4 cup of tamari or gluten-free soy sauce
  • 1/4 cup of olive oil
  • 2 tbsp of maple syrup
  • 1 tbsp of garlic powder
  • 1 tsp of sriracha sauce (optional)
  • 12 medium-large leaves of Swiss chard
  • 1 large orange, yellow or red bell pepper
  • 1 large carrot
  • Handful of fresh basil
  • Handful of fresh mint

Peanut Sauce


Instructions

1. Pre-heat oven to 400° and prep the tofu marinade, whisking together soy sauce, olive oil, maple syrup, garlic powder and sriracha sauce.

2. Remove tofu from packaging and gently press between paper towel using your hands for a few minutes. This will remove any excess liquid. Then slice length wise into 1/4″ thick strips and place into marinade. Be sure all pieces of tofu are covered in marinade. Transfer to a shallow baking dish if necessary.

3. Let tofu marinade for as little as 10 minutes or as long as 24 hours. Then remove from marinade and place on a baking sheet lined with parchment paper.

4. Bake for 15 minutes, flipping at the half way point. If you prefer a crispier tofu, cook for an additional 3-5 minutes on each side.

5. While tofu bakes, prep vegetables and peanut sauce. 

6. For the Swiss chard wraps, remove the stems from the chard and lay each piece flat so it’s ready for assembly. Cut your peppers length-wise in strips. Use a vegetable peeler on the carrot to make thin ribbons. Remove herbs from stem.

7. For the peanut sauce, combine all ingredients together in a bowl and whisk. Sauce will take some whisking to come together and smooth out. If sauce is too thick, add 1-2 tsp of water at a time.

8. Remove tofu from oven and let cool for 10-12 minutes before assembling your wraps. To assemble, place tofu, vegetables and herbs in the middle of the Swiss chard leaf and slowly wrap (ike you would a burrito but leaving the ends out).

9. Serve with peanut dipping sauce and enjoy!


Notes

  • This dish works great as an appetizer, snack, lunch or dinner option!
  • If you prefer spicier food, consider adding more sriracha sauce or red pepper chili flakes
