I’ve made a pact to myself that I will stop buying store bought protein bars, and instead I started making these chickpea “cookie dough” protein balls. They’re seriously so delicious. You would never know these protein balls are made from chickpeas! They are an easy-to-make homemade protein bar. And packed with healthy ingredients that you (and your little one!) will benefit from. My toddler loves these homemade protein balls and eats them by the handful for breakfast, snack and dessert. I hope you love this chickpea cookie dough recipe too!
High Protein Snack Idea For Toddlers
I’m always dreaming up toddler-friendly recipes that are also healthy and filling. Enter these easy chickpea “cookie dough” protein balls.
This is a no-bake recipe. And they also contain no protein powder! Which I love.
Instead, this healthy cookie dough is filled with superfood ingredients, like chickpeas, oats, nuts butter, hemp seeds, flax seeds and more.
My chickpea protein ball cookie dough is also gluten-free and vegan!
Overall, this healthy cookie dough is a great high protein snack idea for toddlers. And adults too! I love them.
What Ingredients Do You Need To Make Chickpea “Cookie Dough” Protein Balls
Chickpeas — either canned or fresh
Oat flour — I just make my own by pulsing oats in the blender
Peanut or nut butter — whatever you prefer, I’ve made it with both and love both
What Tools & Equipment Do You Need To Make Chickpea “Cookie Dough” Protein Balls
A food processor or high speed blender — I just use my Vitamix for this recipe and it works well though you do need to be cautious to stop and adjust the chickpeas every few seconds with a spatula so they don’t get stuck on the blade.
Remember, you’re aiming for protein balls that are the consistency of cookie dough. So you want your batter to be nice and smooth.
Step 2: Add in all remaining ingredients except chocolate chips and blend some more
Once your chickpeas are well blended, add in all remaining ingredients (dates, nut butter, maple syrup, oat flour, seeds).
Blend/pulse until well combined. You may need to do stop and mix your batter with a spatula a few times before turning your processor or blender back on. But continue to do so until all ingredients are combined.
Step 3: Move batter to a bowl & fold in chocolate chips
Once well mixed, transfer to a bowl and fold in your chocolate chips.
You can add as many or as few as you’d like here!

Ingredients

3 cups of drained chickpeas — either canned or fresh
1/2 cup of oat flour — I just make my own by pulsing oats in the blender
1/2 cup of peanut or nut butter — whatever you prefer, I’ve made it with both and love both
1/4 cup of maple syrup
5 medjool dates pitted — you can also soak in hot water before to soften, which will make blending easier
1/4–1/2 cup of semi-sweet chocolate chips (or more based on your preference)
Instructions
1. Using either a food processor or high speed blender, pulse your chickpeas until smooth and well blended. Remember, you’re aiming for protein balls that are the consistency of cookie dough. So you want your batter to be nice and smooth.
2. Once chickpeas are pulsed to your desired consistency and no chunks are remaining, add all additional ingredients except chocolate chips.
3. Pulse until well-combined, stopping throughout to push down the batter with a spatula as needed. If using a blender, you may need to do this more frequently as the batter may get stuck. Continue pulsing and adjusting until all ingredients are well-combined.
4. Transfer to a large mixing bowl and stir in chocolate chips.
5. Line a baking sheet with parchment paper and roll your batter into bite-sized balls, placing on tray.
6. Place tray of chickpea cookie dough protein balls into the freezer for minimum 30 minutes. This is important so they keep their shape when storing in the fridge.
7. Transfer to an air tight container and store in the fridge for up to 2 weeks.
